This was from my Great-Grandmother Mueller and was called Ice Box Torte, but the children renamed it because they loved this delicious dessert made with graham crackers. Recipe written in spring of 1952.
4 eggs, beaten (or use Egg Beaters to avoid raw eggs)
1/4 pound butter
1/4 cup brewed coffee
1 cup sugar
1 box of dates (equivalent is a bag of pitted dates)
1 box of graham crackers
1/2 cup nuts (optional, we don't use nuts)
Boil the dates in a small pan of water. Remove when soft and chop finely. Cream butter and sugar. Stir in beaten eggs. Then stir in the coffee. Layer two layers of graham crackers in a 9x13 cake pan. Top crackers with a layer of dates. Top the dates with a layer of butter mixture. Repeat two or three times to use all ingredients. Place in refrigerator to chill thoroughly before serving.
